French Onion Soup

Ingredients:
- 4 medium to large white or yellow onions
- 4-6 whole bay leaves
- 3-4 tablespoons butter (substitute with dairy free option if you'd like)
- 6 cups of beef broth or beef stock
- 1 cup of white wine (NOT white wine vinegar)
- Salt and pepper to taste
- Smoked provolone cheese (omit id dairy free or vegan)
Directions:
- Thinly slice onions
- In a large pot over medium heat, melt butter
- Place slices onions and whole bat leaves into pot with melted butter. Stir occasionally until onions caramelize (typically takes about 20 minutes. Onions should be soft and have a golden caramel color)
- Add 1 cup of white wine to deglaze pot
- Add 6 cups beef broth or beef stock along with salt and pepper.
- Simmer for 20 minutes
- Serve hot with one slice of provolone cheese on top.
